Open sesame! Ali Baba’s magical command comes from the way sesame pods burst open upon maturity to reveal a treasure of tiny crunchy seeds. Sesame seeds are rich in magnesium, copper and calcium, and contain vitamins B1 and A. They’re a good source of dietary fibre and monounsaturated fats.
Perhaps the oldest condiment used by man, sesame seeds have added a nutty taste to many dishes across the world. Great in both sweet and savoury dishes, and can be roasted and crushed to make tahini.
HOW TO USE
- The natural flavour of sesame seeds in intensified by toasting; do so in a dry pan over low heat until fragrant.
- Add sesame seeds into the batter the next time you make homemade bread, muffins, or cookies.
- Use in place of chopped nuts to make candies and brittles.
- Make homemade tahini by combining toasted sesame seeds and oil in a food processor (about 1 C. seeds to ¼ C. oil).
- Sprinkle toasted sesame seeds over salads, stir-fries, and steamed vegetables.
- Add to burgers, meatballs, or meatloaf.
