One of the oldest domesticated crops, barley has been grown since prehistoric times. It was a staple cereal of ancient Egypt, where it was used to make bread and beer.

Pearled barley is barley grain that has been processed to remove the outer hull and bran.

This wonderfully versatile grain has a rich nut-like flavour and an appealing chewy, pasta-like consistency. Although soup is the most popular way to eat barley, it can be used just like any other grain, such as couscous or rice.

HOW TO USE

Pearled Barley does not require pre-soaking; however it does require a good quantity of liquid when cooking. If using barley in soups or hotpots add it at the beginning of the cooking process with 3-4 cups of water or stock and allow approximately 45 minutes cooking time.

To cook pearled barley as a side dish, simmer 1 cup of barley and 3 cups of water or stock, covered on a low heat for about 45 minutes. When barley is tender and most of the liquid is absorbed; fluff grains with a fork, and serve with curries and stir fries.

Pre-cooked Barley can also be used in salads and as a savoury filling for stuffed capsicums.
